Avocado toast with roasted chickpeas

Steps

1. Preheat oven to 350F

2. In a bowl mix together all of the chickpea ingredients, until well combined.

3. Spread the chickpeas onto a baking tray, and bake for 20-25 minutes.

4. In a small bowl, combine all the tahini ingredients and whisk until smooth.

5. Mash the avocado and add in the remaining ingredients.

6. Allow the chickpeas to cool for a few minutes. Meanwhile toast your bread of choice. I chose a gluten free, vegan everything bagel.

7. Smear the avocado mix onto the bread, then layer with chickpeas. Drizzle tahini dressing on top.

Ingredients

Roasted chickpeas:


- 1 can chickpeas

- 1 tbsp oil

- 1/2 tsp turmeric

- 1/2 tsp garlic powder

- 1/2 tsp paprika

- 1 tsp cumin

- salt & pepper


Tahini dressing:

- 1/3 cup tahini

- 4 tbsp lemon juice

- 1 to 2 garlic cloves

- 1/3 cup warm water

- salt & pepper

Smashed avocado (optional):

- 1 ripe avocado

- lime juice

- salt & pepper

- garlic powder
