Steps

1. Preheat oven to 375F and grease an 8X8 pan

2. In large bowl whisk together flour, quinoa, sugar, baking powder, cinnamon and a pinch of salt

3. Add chia eggs, banana and nut butter until fully combined

4. Fold in zucchini, flax seeds and chocolate chips

5. Press into greased pan, and bake for 15-20 minutes

6. Let cool down completely, slice and enjoy!

- 1 ¼ GF oat flour (ground oats)

- 1 cup cooked quinoa

- 1/3 cup cane sugar

- 1 tsp cinnamon

- 2 chia eggs (2 tbsp chia + 6 tbsp water)

- 1 mashed banana

- ¼ cup nut butter

- 1 cup shredded zucchini

- ½ cup dark chocolate chips

- ¼ cup ground flax
