Red pepper hummus


1. Brush the red peppers with oil, and broil skin up until they start to blister. Wrap red peppers in plastic and set aside to steam. This step is not necessary but makes removing the skin easier. Once cooled, peel off the skin

2. In a blender or food processor, add the tahini and lemon juice and blend for 1 minute

3. Add oil, garlic, and spices. Blend for 30 seconds, scraping the sides down as you go

4. Add half of the chickpeas and blend for 1 minute, scraping down the sides and bottom. Add reaming chickpeas and blend until thick and quite smooth

5. Add the roasted red peppers and continue to blend for 1-2 minutes, or until smooth, If it is too thick or chunky, slowly add 1-3 tbsp water

How to make


- 2 red bell peppers, sliced in half and cored

- 2 cans chickpeas, rinsed and peeled

- ¼ cup fresh lemon juice

- ¼ cup tahini

- 2-3 garlic cloves

- 2-3 tbsp oil

- 2 tsp cumin

- Salt & pepper
